Steps
In a skillet over medium heat, add sesame oil and sauté minced garlic and ginger until fragrant.
Add ground chicken to the skillet, breaking it apart with a spatula, and cook until browned.
Stir in soy sauce, chili paste, salt, and pepper, and cook for an additional 2-3 minutes until chicken is fully cooked.
Remove from heat and stir in chopped green onions and cilantro if using.
Spoon the chicken mixture into the center of each lettuce leaf and wrap it up like a taco.
