Steps
1. Rinse the white rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
2. In a pan, heat the oil over medium heat. Add cumin seeds and let them sizzle.
3. Add the diced potatoes and carrots; sauté for about 5 minutes until they start to soften.
4. Stir in the ginger-garlic paste, chopped green chili, and sauté for another 2 minutes.
5. Add the shredded cabbage and chopped tomato. Cook until the cabbage wilts and the tomato softens.
6. Sprinkle in the turmeric, garam masala, and salt. Mix well and let it cook for another 2-3 minutes.
7. In a separate pan, fry the egg sunny-side up or to your preference.
8. To assemble, place a serving of rice in a bowl, top it with the vegetable mixture, and finally add the fried egg on top.
9. Garnish with fresh cilantro and serve hot!
