Spicy Indian Bean and Egg Pasta

This Spicy Indian Bean and Egg Pasta combines the heartiness of beans with the richness of eggs, all tossed in al dente pasta and flavored with Indian spices. A perfect fusion dish that’s both filling and flavorful.

Steps

1. Boil water in a pot, add a pinch of salt, and cook the pasta according to package instructions until al dente. Drain and set aside. 2. In a pan, heat oil over medium heat. Add cumin seeds and let them sizzle. 3. Add the chopped onion and garlic, sauté until translucent. 4. Stir in the chopped tomato and cook until it softens. 5. Add the cooked beans, turmeric, red chili powder, and salt. Mix well and cook for 2-3 minutes. 6. In a separate small pan, fry the egg sunny-side up or to your preference. 7. Add the cooked pasta to the bean mixture, stirring to combine well, and cook for another minute. 8. Serve the pasta topped with the fried egg and garnished with fresh coriander.
