Spicy Lemon Garlic Shrimp with Quinoa

Steps

1. Rinse the quinoa under cold water. In a small saucepan, combine quinoa with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. 2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. 3. Add the shrimp, chili flakes, salt, and pepper. Cook for about 3-4 minutes, stirring occasionally, until shrimp are pink and cooked through. 4. Stir in lemon juice and remove from heat. 5. Fluff the quinoa with a fork and serve topped with the spicy shrimp. Garnish with fresh parsley.
