Steps
1. Cook the cold noodles according to package instructions, then rinse under cold water and drain.
2. In a bowl, mix the chili sauce, soy sauce, sesame oil, and salt to create a dressing.
3. In a serving bowl, combine the cold noodles, cucumber, carrot, and dressing. Toss gently to coat.
4. Carefully peel the boiled quail eggs and place them on top of the noodles.
5. Garnish with chopped cilantro and chopped chili if desired. Serve chilled.
