Steps

1. Rinse the quinoa under cold water and drain. 2. In a small pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. 3. In a mixing bowl, combine black beans, corn, red bell pepper, olive oil, lime juice, cumin, chili powder, salt, and pepper. Mix well. 4. Once the quinoa is cooked, fluff it with a fork and add it to the mixing bowl with the bean mixture. Stir to combine. 5. Serve the quinoa and black bean mixture in a bowl.
