1. Press the tofu to remove excess moisture, then cut it into cubes. 2. Heat the sesame oil in a pan over medium heat. 3. Add the minced garlic and ginger, sautéing until fragrant. 4. Add the tofu cubes and stir-fry until golden brown, about 5-7 minutes. 5. Add the julienned carrots and stir-fry for another 3-4 minutes until they are tender-crisp. 6. Stir in the soy sauce and chili paste, mixing well to coat the tofu and carrots. 7. Season with salt and pepper to taste. 8. Serve hot, garnished with chopped green onions.
