
Steps
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breast by making a horizontal cut almost through the thickness, then open it up like a book.
- In a small bowl, mix together the chopped spinach, feta cheese, minced garlic, olive oil, salt, and pepper.
- Stuff the spinach and feta mixture into the pocket of the chicken breast.
- Use toothpicks to secure the opening of the chicken breast.
- Place the stuffed chicken breast on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the toothpicks and let the chicken rest for a few minutes before serving.
