Steps

1. Begin by preparing the bitter melon. Slice it thinly and remove the seeds. Soak the slices in salted water for about 10 minutes to reduce bitterness. 2. Rinse the bitter melon slices under cold water and drain. 3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. 4. Add the bitter melon slices to the skillet and stir-fry for about 3-4 minutes until slightly tender. 5. Add soy sauce and sesame oil, stirring to combine. Cook for another 2 minutes. 6. In a bowl, combine diced watermelon, a pinch of salt, and pepper. Toss gently to mix. 7. Serve the stir-fried bitter melon alongside the watermelon salad, garnished with fresh cilantro.
