Steps

1. Preheat your oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds. 3. In a bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper. 4. Stuff the mixture into the hollowed bell pepper. 5. If using, sprinkle cheese on top of the stuffed pepper. 6. Place the stuffed pepper in a baking dish and add a splash of water to the bottom of the dish. 7. Cover with foil and bake for 25 minutes. 8. Remove the foil and bake for an additional 10 minutes, or until the pepper is tender. 9. Garnish with fresh cilantro before serving.
