Stuffed Bell Peppers with Quinoa and Black Beans

These vibrant stuffed bell peppers are filled with a nutritious mixture of quinoa, black beans, and spices, making a satisfying main dish. Perfectly baked until tender, they are both flavorful and healthy.

Steps

1. Preheat your oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds. 3. In a bowl, mix the cooked quinoa, black beans, diced onion, cumin, chili powder, salt, and pepper. 4. Stuff the bell pepper with the quinoa mixture and top with cheese if desired. 5. Place the stuffed pepper in a baking dish and add a little water to the bottom. 6. Cover with foil and bake for 25-30 minutes, until the pepper is tender. 7. Remove the foil for the last 5 minutes to melt the cheese. 8. Garnish with fresh cilantro before serving.
