
Steps
- In a small bowl, mix soy sauce, honey, rice vinegar, cornstarch, ginger powder, salt, and pepper.
- In a pan over medium heat, stir-fry the chicken until cooked through. Remove from pan.
- In the same pan, stir-fry the bell peppers until slightly tender.
- Add the pineapple chunks and cooked chicken back to the pan.
- Pour the sauce over the chicken and veggies, stirring until the sauce thickens.
- Serve the Pineapple Chicken Stir-Fry over cooked rice.

- 1 small chicken breast, sliced
- 1 cup pineapple chunks
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- 1/2 tsp ginger powder
- Salt and pepper to taste
- Cooked rice for serving
