Steps
1. In a small bowl, mix soy sauce, honey, rice vinegar, cornstarch, ginger powder, salt, and pepper.
2. In a pan over medium heat, stir-fry the chicken until cooked through. Remove from pan.
3. In the same pan, stir-fry the bell peppers until slightly tender.
4. Add the pineapple chunks and cooked chicken back to the pan.
5. Pour the sauce over the chicken and veggies, stirring until the sauce thickens.
6. Serve the Pineapple Chicken Stir-Fry over cooked rice.
