1. Rinse the dried beans and soak them overnight. 2. In a pot, heat olive oil over medium heat. Add onions, garlic, carrot, and celery. Saute until softened. 3. Add soaked beans and vegetable broth. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender. 4. Season with salt and pepper. Serve hot.
