Steps
1. Heat olive oil in a non-stick skillet over medium-high heat.
2. Add the beef strips and cook until browned, about 3-4 minutes.
3. Remove beef from the skillet and set aside.
4. In the same skillet, add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.
5. Add the sliced onion and bell pepper to the skillet, and continue cooking for another 4-5 minutes until the vegetables are tender.
6. Stir in the minced garlic and cook for an additional minute.
7. Return the beef to the skillet, add soy sauce, and season with salt and pepper. Stir to combine and heat through.
8. Serve hot, garnished with fresh parsley.
