Steps of Preparation: 1. Heat the oil in a medium-sized pot over medium heat. 2. Add the ginger and garlic and cook until fragrant, about 1 minute. 3. Add the vegetable broth, coconut milk, red curry paste, and sugar. Stir to combine. 4. Bring the soup to a boil, then reduce the heat to low and simmer for 10 minutes. 5. Add the tofu, mushrooms, and carrots to the soup and simmer for 5 more minutes. 6. Remove the pot from the heat and stir in the cilantro and lime juice.
