Three Cheese Zucchini Gratin

A delicious, vegetarian main dish made with zucchini, peppers and three kinds of cheese. This is a great dish to make when you have to feed a large crowd

Steps

1. Preheat oven to 350° F (175° C). 2. Heat olive oil in a medium skillet over medium heat. Then add the onion, bell peppers and garlic. Saute for 3-4 minutes, or until the vegetables become fragrant and crisp-tender. 3. Add the zucchini and continue to saute for 2-3 more minutes, or until the zucchini are just beginning to soften. 4. Grease an 8-inch baking dish with remaining olive oil. Spread the vegetables in the dish. 5. Sprinkle the mozzarella, cheddar, and parmesan cheese over the vegetables. Top with breadcrumbs. 6. Bake for 25-30 minutes, or until golden brown and bubbly. 7. Remove from oven and let cool for 5-10 minutes. Serve warm.
