Steps
1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk together eggs, ricotta, tomato and season with salt and pepper.
3. Heat the olive oil in an oven-safe skillet over medium heat.
4. Pour the egg mixture into the skillet and cook for 2 minutes.
5. Transfer the skillet to the oven and bake for 10 minutes, or until the eggs are set.
6. Serve hot or cold.
