Steps
1. Heat a pan over medium heat and add a bit of oil. Saute the red onion and bell pepper until softened.
2. Add the shredded jackfruit to the pan and season with smoked paprika, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes.
3. Warm the corn tortillas in a separate pan.
4. Fill the tortillas with the jackfruit mixture.
5. Garnish with fresh cilantro and serve with lime wedges.
