
Steps
- Spiralize the zucchini to create noodles and set aside.
- In a food processor, blend basil, pine nuts, garlic, and Parmesan cheese until smooth. Gradually add olive oil and blend until creamy. Season with salt and pepper.
- Season the chicken breast with salt and pepper. Grill or pan-fry over medium heat for about 6-7 minutes per side until cooked through. Remove and let it rest.
- In the same pan, add the zucchini noodles and toss them for 2-3 minutes until slightly softened.
- Mix in the pesto sauce with the zucchini noodles until evenly coated.
- Slice the grilled chicken and serve it over the zucchini noodles. Garnish with cherry tomatoes if desired.
