Steps
1. Spiralize the zucchini to create noodles and set aside.
2. In a food processor, blend basil, pine nuts, garlic, and Parmesan cheese until smooth. Gradually add olive oil and blend until creamy. Season with salt and pepper.
3. Season the chicken breast with salt and pepper. Grill or pan-fry over medium heat for about 6-7 minutes per side until cooked through. Remove and let it rest.
4. In the same pan, add the zucchini noodles and toss them for 2-3 minutes until slightly softened.
5. Mix in the pesto sauce with the zucchini noodles until evenly coated.
6. Slice the grilled chicken and serve it over the zucchini noodles. Garnish with cherry tomatoes if desired.
