Steps
1. Cut the pork loin into small pieces.
2. Heat olive oil in a pan over medium heat.
3. Add onions and garlic, sauté until translucent.
4. Add pork loin and cook until browned and cooked through, about 8-10 minutes.
5. Stir in smoked paprika, salt, and pepper.
6. Reduce heat and simmer for 5 minutes to blend flavors.
7. Remove from heat, shred the pork pieces with a fork.
8. Mix in chopped parsley.
9. Serve warm, optionally spread on warm crusty bread.
