1. Put diced cucumber, tomatoes, bell pepper and garlic into a blender and mix until blended. 2. Pour the mixture into a bowl and add the lemon juice, olive oil, paprika and salt to the mixture. 3. Mix until combined. 4. Serve immediately with a sprinkle of pepper and extra olive oil, if desired.
