Steps
1. Preheat the oven to 350°F (180°C) and grease a muffin tin.
2. In a bowl, whisk the eggs and add in tomatoes, bell peppers, onions, cumin, paprika, salt, and pepper. Mix well.
3. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
4. Bake for 15-20 minutes or until the muffins are set.
5. Let them cool slightly, garnish with fresh parsley, and enjoy!
