Arabic Vegetable Stuffed Potato Skins

A delicious Arab-inspired vegetarian snack that combines the flavors of buttery potatoes, cheesy filling, and wholesome vegetables.

Steps

1. Preheat the oven to 200°C (400°F). 2. Wash the potato, poke it with a fork, and bake it for 45-50 minutes until tender. 3. Cut the potato in half, scoop out the flesh, leaving a thin layer inside. 4. In a pan, melt butter, add diced carrots, and cook until softened. 5. Mix the cooked rice, grated cheese, cooked carrots, salt, and pepper in a bowl. 6. Stuff the potato skins with the vegetable and cheese mixture. 7. Bake for another 10 minutes until the cheese is melted and bubbly. 8. Serve warm and enjoy!
