Steps
1. Preheat oven to 375 degrees F.
2. Cut bell peppers in half and make sure to remove the seeds and stems.
3. In a bowl, mix quinoa, beans, cheese, onion, garlic, olive oil, salt and pepper.
4. Fill each bell pepper half with the quinoa mixture.
5. Arrange prepared bell pepper halves in a 9 inch baking dish.
6. Bake in preheated oven for 25 minutes or until bell peppers are tender.
7. Serve.
