Steps
1. In a bowl, combine garam masala, curry powder, paprika, dried rosemary, gravy browning, minced ginger, and minced garlic to create a marinade.
2. Score the skin of the duck breast lightly and rub the marinade all over the duck, ensuring it penetrates the meat. Season with salt and pepper.
3. Cover the duck and marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.
4. Preheat your oven to 200°C (400°F).
5. Heat olive oil in an oven-safe skillet over medium-high heat. Place the duck breast skin-side down and sear for 4-5 minutes until the skin is crispy and golden.
6. Flip the duck breast and transfer the skillet to the preheated oven. Roast for about 10-12 minutes for medium-rare, or longer if you prefer it well done.
7. Remove the duck from the oven and let it rest for 5 minutes before slicing.
8. Serve the duck slices garnished with fresh rosemary sprigs, alongside your choice of sides.
