Form the ground beef into a patty and season with salt and pepper. Grill or pan-fry until fully cooked, about 4-5 minutes per side. Place a slice of American cheese on top of the patty for the last minute of cooking to melt.
In a separate skillet, heat 1 tbsp of olive oil over medium heat. Add the sliced onions and cook until caramelized, about 8-10 minutes, stirring occasionally.
Toast the potato bun in the same skillet until golden brown. Assemble the burger by placing the tomato slice on the bottom bun, followed by the beef patty with melted cheese, and then the caramelized onions. Top with lettuce, bacon jam, pickles, Sriracha (if using), and Dijon mustard. Finish with the top bun.
