
Steps
- In a bowl, mash the banana until smooth.
- Add the egg, coconut milk, and honey; mix well.
- In another bowl, combine flour, baking powder, shredded coconut, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Heat a non-stick pan over medium heat and lightly grease with butter or oil.
- Pour batter to form small pancakes and cook for 2-3 minutes until bubbles form on top.
- Flip and cook the other side for another 2 minutes until golden brown.
- Serve warm, optionally topped with extra banana slices or syrup.
