Steps
1. In a bowl, mash the banana until smooth.
2. Add the egg, coconut milk, and honey; mix well.
3. In another bowl, combine flour, baking powder, shredded coconut, and salt.
4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
5. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
6. Pour batter to form small pancakes and cook for 2-3 minutes until bubbles form on top.
7. Flip and cook the other side for another 2 minutes until golden brown.
8. Serve warm, optionally topped with extra banana slices or syrup.
