Steps
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken thigh with salt, pepper, and paprika. Add it to the skillet, skin-side down, and sear until golden brown, about 5-7 minutes.
3. Flip the chicken and add the diced onion and garlic, sautéing for another 2 minutes.
4. Pour in the beer, scraping the bottom of the skillet to release any browned bits.
5. Reduce heat to low, cover, and let simmer for 30 minutes, until the chicken is cooked through and tender.
6. Serve hot, garnished with fresh parsley if desired.
