Steps
1. Cook the pasta in salted boiling water according to package instructions until al dente, then drain and reserve 2 tbsp of pasta water.
2. In a food processor, combine black garlic scapes, toasted pine nuts, and Parmesan cheese.
3. Pulse while slowly drizzling in olive oil until the mixture forms a smooth pesto.
4. Season the pesto with salt, pepper, and a squeeze of lemon juice.
5. Toss the cooked pasta with the pesto, adding a little reserved pasta water if needed to loosen the sauce.
6. Serve immediately with an extra sprinkle of Parmesan if desired.
