Brazilian Açaí Ice Cream with Tapioca Pearls

Steps

1. Cook tapioca pearls: Boil water with sugar, add tapioca pearls and cook until translucent (about 10 minutes), then drain and rinse with cold water. 2. Blend frozen açaí pulp, coconut milk, and honey in a blender until smooth and creamy. 3. Pour the açaí mixture into a bowl and freeze for 30 minutes, stirring every 10 minutes to get a soft ice cream texture. 4. Place the cooked tapioca pearls at the bottom of a serving glass. 5. Scoop the açaí ice cream on top of the tapioca pearls. 6. Garnish with fresh berries if desired and serve immediately.
