Steps
1. In a bowl, mix olive oil, lime juice, garlic powder, paprika, salt, and pepper to create the marinade.
2. Add the chicken breast to the marinade, coating it well. Let it marinate for at least 30 minutes.
3. Preheat a grill or grill pan over medium-high heat.
4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
5. While the chicken is grilling, prepare the quinoa salad by combining cooked quinoa, cherry tomatoes, cucumber, cilantro, lemon juice, and salt in a mixing bowl. Toss well.
6. Once the chicken is cooked, let it rest for a few minutes before slicing.
7. Serve the sliced chicken on a plate alongside the quinoa salad.
