Steps
1. Preheat the grill to medium-high heat.
2. In a small bowl, combine the olive oil, paprika, cumin, salt, and pepper. Rub the mixture onto both sides of the chicken breast.
3. Grill the chicken for about 6-8 minutes per side, or until cooked through and juices run clear.
4. While the chicken is grilling, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeno, lime juice, cilantro, and salt. Mix well.
5. Once the chicken is cooked, remove from the grill and let it rest for a few minutes. Slice the chicken breast into thin strips.
6. Serve the grilled chicken topped with the mango salsa.
