Steps
1. Preheat the oven to 350°F (175°C).
2. In a bowl, mash the ripe banana until smooth. Add the grated carrot, cereal, honey, and vanilla extract. Mix well.
3. Press the mixture into the bottom of a small baking dish to form the crust.
4. In another bowl, combine the low-fat cream cheese and honey. Mix until creamy and smooth.
5. Pour the cream cheese mixture over the crust, spreading it evenly.
6. Bake in the preheated oven for 15-20 minutes, or until the cheesecake is set.
7. Remove from the oven and let it cool before serving.
8. Slice and enjoy!
