Steps
1. Preheat the oven to 400°F (200°C).
2. Peel and slice the carrots into thin sticks.
3. Mince the garlic cloves.
4. In a mixing bowl, combine the sliced carrots, minced garlic, olive oil, salt, and pepper. Toss until well coated.
5. Place the carrot mixture on a baking sheet and spread it out in a single layer.
6. Bake the carrots for 15-20 minutes, or until they are tender and slightly caramelized.
7. While the carrots are roasting, season the chicken breast with Cajun seasoning, salt, and pepper.
8. Heat a skillet over medium heat and add a drizzle of olive oil.
9. Cook the chicken breast for about 6-8 minutes on each side, or until it reaches an internal temperature of 165°F (74°C).
10. Once cooked, let the chicken rest for a few minutes before slicing it.
11. Serve the Cajun chicken alongside the roasted garlic carrots.
