Steps
1. Preheat oven to 200°C (400°F).
2. Heat olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt, cooking slowly until onions are deeply golden and caramelized, about 15 minutes.
3. Stir in fresh thyme and honey (if using), then remove from heat.
4. Roll out puff pastry on a baking sheet lined with parchment paper.
5. Spread the caramelized onions evenly over the pastry, leaving a small border.
6. Crumble goat cheese over the onions.
7. Season with black pepper.
8. Fold the edges of the puff pastry slightly inward to create a rustic border.
9. Bake in preheated oven for 20 minutes or until pastry is golden and puffed.
10. Let cool for 5 minutes before serving.
