Carrot Fried Rice with Egg

A simple and flavorful single-serving fried rice dish combining grated carrots, scrambled eggs, and lightly fried rice for a quick and healthy meal.

Steps

1. Heat oil in a frying pan over medium heat. 2. Add grated carrot and sauté for 2-3 minutes until slightly softened. 3. Push carrots to one side of the pan. 4. Crack the egg into the empty side and scramble gently until cooked. 5. Add cooked rice to the pan and mix everything together. 6. Season with salt, pepper, and soy sauce if using. 7. Stir-fry for another 2 minutes, ensuring the rice is heated through and well combined. 8. Serve hot.
