1. Heat a skillet or wok over medium heat and add a splash of cooking oil. 2. Add the diced chicken breast and cook until browned and cooked through, about 4-5 minutes. 3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant. 4. Add the peas, carrots, and bell pepper to the skillet, sautéing for another 3-4 minutes until the vegetables are tender. 5. Add the cauliflower rice to the skillet, stirring to combine all ingredients. 6. Pour in the soy sauce and sesame oil, mixing well.
