1. Heat a skillet or wok over medium heat and add a splash of cooking oil. 2. Add the diced chicken breast and cook until browned and cooked through, about 4-5 minutes. 3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant. 4. Add the peas, carrots, and bell pepper to the skillet, sautéing for another 3-4 minutes until the vegetables are tender. 5. Add the cauliflower rice to the skillet, stirring to combine all ingredients. 6. Pour in the soy sauce and sesame oil, mixing well. Cook for another 3-4 minutes until the cauliflower is tender but not mushy. 7. Season with salt and pepper to taste, and garnish with sliced green onion before serving.
