Steps
1. Season the chicken breast with salt, pepper, and cumin on both sides.
2. In a skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked and golden brown.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
5. Pour in the coconut milk and lime juice, stirring to combine. Bring to a simmer.
6. Add the chopped cilantro and return the chicken to the skillet. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors.
7. Serve warm, garnished with lime wedges and additional cilantro.
