
Steps
- Season the chicken breast with salt, pepper, and cumin on both sides.
- In a skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked and golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the coconut milk and lime juice, stirring to combine. Bring to a simmer.
- Add the chopped cilantro and return the chicken to the skillet. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors.
- Serve warm, garnished with lime wedges and additional cilantro.
