- Steps of Preparation:
- Beat the egg and milk together in a mixing bowl until combined.
- Heat a small non-stick pan over medium-high heat. Pour in 1/2 the egg mixture and tilt the pan to spread evenly.
- Reduce heat to low and scatter cheese, tomatoes and herbs over the egg.
- Allow the underside to cook for approx. 1 min and then fold one side of the omelette over the other.
- Cook for a further 2 mins and then slide omelette onto a plate. Enjoy!

- 1 egg
- 1 tablespoon milk
- 2 slices cheese
- 1 tablespoon chopped cherry tomatoes
- 1 tablespoon chopped fresh herbs (e.g. basil, coriander, chives).
