Creamy Butternut Squash Soup

This creamy and healthy butternut squash soup is a perfect way to warm up on cold days. Deliciously creamy and full of flavor, it's easy to make and a great way to enjoy a healthy meal.

Steps

1. Heat the olive oil in a large pot over medium-high heat. 2. Add the onion, garlic, celery and thyme and cook until the vegetables are softened, about 5 minutes. 3. Add the nutmeg and cumin and cook for 1 minute. 4. Add the vegetable broth and butternut squash and bring to a boil. 5. Reduce the heat to low and simmer for 20 minutes. 6. Remove from the heat and let cool for 10 minutes. 7. Transfer the soup to a blender and blend until smooth. 8. Return the soup to the pot and stir in the yogurt. 9. Season with salt and pepper, to taste. 10. Serve warm.
