Steps
1. In a medium pot, heat the olive oil over medium heat.
2. Add the chopped onion and minced garlic; sauté until translucent.
3. Add the cubed beef and cook until browned on all sides.
4. Stir in the sliced carrot and diced tomato, cooking for another 2-3 minutes.
5. Pour in the beef broth, bring to a boil, then reduce heat and let it simmer for 20 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh parsley.
