Steps
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic. Sauté until onion becomes translucent.
3. Peel and slice the apple, then add it to the pot along with broccoli florets and diced carrot. Stir well.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until the vegetables are tender.
5. Use an immersion blender or transfer the mixture to a blender to puree until smooth.
6. Return the soup to the pot and stir in the shredded cheese until melted and well combined.
7. Season with salt and pepper to taste.
