Steps
1. Preheat the oven to 400°F (200°C).
2. Peel and cut the carrots into sticks or rounds.
3. In a bowl, combine the olive oil, cumin, coriander, cinnamon, paprika, salt, and pepper.
4. Toss the carrots in the spice mixture until evenly coated.
5. Place the carrots on a baking sheet lined with parchment paper.
6. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized.
7. Serve hot as a side dish.
