1. Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. 2. Add the finely chopped onion and sauté until golden brown. 3. Stir in the minced garlic and cook for another minute until fragrant. 4. Add the diced potato and cook for about 5 minutes, stirring occasionally. 5. Add the chopped tomatoes and curry powder, mixing well. Season with salt. 6. Pour in a splash of water, cover the pan, and let it simmer for about 15 minutes or until the potatoes are tender. 7. Garnish with fresh cilantro before serving.
