
Steps

- Add the diced potato and cook for about 5 minutes, stirring occasionally.
- Add the chopped tomatoes and curry powder, mixing well. Season with salt.
- Pour in a splash of water, cover the pan, and let it simmer for about 15 minutes or until the potatoes are tender.
- Garnish with fresh cilantro before serving.
