Instructions: 1. Heat 2 tablespoons of olive oil in a pan over medium heat. 2. Add the chopped onion to the pan and fry until golden brown. 3. Add the chopped potatoes to the pan and fry until golden brown. 4. Add the curry powder and fry for 2 minutes. 5. In a separate pan, heat the remaining olive oil over medium heat. 6. Add the chopped ginger and fry for 1 minute. 7. Crack the egg into the pan and fry until golden and cooked through. 8. Add the egg to the potato and onion mix and mix well until everything is combined. 9. Add salt and pepper to the dish to taste and serve hot.
