Indian-Style Roasted Veggies

This delicious Indian-style side dish is made by roasting carrots, onions, potatoes and tomatoes. Serve warm with your favorite Indian main dish.

Steps

1. Preheat oven to 425ºF (220°C). 2. In a large bowl, mix together the carrots, onions, potatoes and tomatoes. 3. Add the coconut oil, curry powder, garlic powder, coriander powder, garam masala, salt and pepper and mix until everything is well coated. 4. Transfer the vegetables to a baking sheet lined with parchment paper and spread out into an even layer. 5. Place in the oven and bake for 25 minutes or until the vegetables are tender and lightly browned. 6. Serve warm.
