Steps
1. Heat the olive oil in a skillet over medium heat.
2. Add diced potatoes and sauté until softened, about 5 minutes. Add onion and continue to cook for an additional 3 minutes.
3. Whisk together the egg, parsley and salt in a bowl. Pour the egg mixture over the potatoes and onion in the skillet.
4. Cook the omelet for 4-5 minutes until the sides are set. Flip the omelet over and cook an additional 4-5 minutes until done.
