Steps
1. Peel and dice the potato, then place it in a pot of boiling salted water. Cook for about 15 minutes or until tender.
2. While the potatoes are cooking, preheat the oven to 400°F (200°C).
3. In a small bowl, mix olive oil, parsley, dill, salt, and pepper. Rub this mixture over the salmon fillet.
4. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes or until cooked through.
5. Once the potatoes are tender, drain them and return them to the pot. Add minced garlic, butter, milk, salt, and pepper. Mash until smooth and creamy.
