Steps
1. Heat sesame oil in a frying pan over medium heat.

4. Increase the heat to medium-high and add the pork slices. Sauté until browned and cooked through.
5. Stir in the diced potatoes and continue to cook, adding a splash of water if necessary, until the potatoes are tender.
6. Add the chopped tomatoes and gluten-free soy sauce, stirring to combine, and cook for another 2-3 minutes.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh cilantro if desired.
