
Steps
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly and prick them all over with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
- Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the flesh, leaving a thin layer of potato intact.
- In a mixing bowl, combine the scooped-out potato flesh, grated cheese, minced garlic, ketchup, chopped onions, salt, and pepper. Mix well until everything is evenly combined.
- Fill each potato shell with the cheese and garlic mixture, pressing it down gently.
- Heat oil in a frying pan over medium heat. Carefully place the stuffed potatoes in the pan, filling side down, and cook for about 3-4 minutes, or until golden brown.
- Flip the potatoes and cook for another 3-4 minutes, or until golden brown on the other side.
- Remove the potatoes from the pan and drain on a paper towel to remove excess oil.
- Serve the garlic cheese stuffed potatoes hot as a delicious side dish.
