Steps
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes thoroughly and prick them all over with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
3. Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the flesh, leaving a thin layer of potato intact.
4. In a mixing bowl, combine the scooped-out potato flesh, grated cheese, minced garlic, ketchup, chopped onions, salt, and pepper. Mix well until everything is evenly combined.
5. Fill each potato shell with the cheese and garlic mixture, pressing it down gently.
6. Heat oil in a frying pan over medium heat. Carefully place the stuffed potatoes in the pan, filling side down, and cook for about 3-4 minutes, or until golden brown.
7. Flip the potatoes and cook for another 3-4 minutes, or until golden brown on the other side.
8. Remove the potatoes from the pan and drain on a paper towel to remove excess oil.
9. Serve the garlic cheese stuffed potatoes hot as a delicious side dish.
